I have followed many healthy diet plans throughout my life and have tried many recipes - most aren't very tasty but I suffer for the cause. Yet, this book has changed my outlook on low-fat eating. The recipes are simple and delicious. You can really serve them at a party. They give great nutritional info with each recipe. As you read through the book you'll be surprised at how enticing low-fat can be. Try the Lemon Chicken and the Leek Soup - Mmm...Mmmm.

So you're on a low carb diet, looking good and feeling great, but your family is definitely on a high carb diet and getting tired of the plain meat dishes you've been serving up lately. Or maybe you are the one who's tired of them. You would like to be able to expand your low carb recipe list, but you don't have a lot of time to spend on the fancy schmancy rigamarole that some low carb cookbooks require. If only you could have your fine palate and your waistline both satisfied...
Say no more my meat-eatin' bretheren! The Everyday Low Carb Slow Cooker Cookbook was literally the answer to my prayers some months ago. As a mom of two small boys and wife to a very picky man I was having a hard time keeping everybody happy at the dinner table while I watched my weight; the "two-entrée meal" was becoming the norm and it took way too much time. In my high carb days I had used my blessed time saver, the crock pot, regularly but recently it was gathering dust on the top shelf. Thank the Lord I can put it to work again and regain my time/sanity.
Now I have to try a minimum of six recipes before I feel that I can review a cookbook with fairness. The recipes that I have completed from TELCSCC are:
Seafood Crustless Quiche (I didn't miss the crust and neither did they - Fabulous!)
Orange Pork
Sausage and White Bean Soup (my dh literally told me it was the best soup ever, bar none)
Chicken with Sun-Dried Tomatoes and Artichokes (rich and hearty, a complete meal)
Chicken with 40 Cloves of Garlic (yes, really!)
Pesto Beef with Grape Tomatoes and Fresh Mozzarella
I think the genius of this cookbook is that the authors recognize that low carb dieters are not only just as busy as everybody else, but also come in a variety of skill levels in the kitchen. Accordingly, there is a special section at the beginning just for the quick'n'easy crowd that features fewer ingredients and timesavers like canned food and packaged mixes to add to your fresh meats and veggies. Believe it or not, the Pesto Beef recipe was one of these! Not that the more "complicated" recipes are that much longer or harder, believe me: the authors make it clear that since slow cookery is all about convenience, their mission is to keep it as simple as possible without sacrificing taste. It would appear that their mission was successful.
In many cases these recipes are so loaded with veggies and hearty broth that you won't need to make a salad or a side dish and nobody will even notice. There are so many more that I haven't gotten to yet, but I'm dying to try the desserts next; Peanut Butter Fudge Cake with Peanut Butter Fudge Drizzle, Coconut Custard, and Pumpkin Pudding, which is promised to be like the pie without the crust. Judging by my success with the quiche, the slow cooker is a natural with those eggy custards and puddings (averaging about 3-4 hours on low).
I would compare this cookbook to Mable Hoffman's Crockery Cookery (the high-carb "bible" for slow cookers) in terms of quality & variety of recipes and simplicity of use. My family has had no complaints since I've started using it, in fact they like TELCSCC dishes better than many of my higher carb dishes. I believe that this is truly the answer for the lifestyles and tastes of a modern health-conscious Americans.

I bought this rice cooker to replace an old aluminum bowl rice cooker that was starting to show a lot of wear and tear after many years of use. I spent a lot of time searching for a rice cooker that wasn't made with aluminum or those non-stick surfaces. I was delighted to find this one that has a stainless steel bowl and steaming basket. It really looks a lot nicer than the picture on the page shows, so I thought it would be great to do a video so you could see it.
I use it practically every day for one thing or another and like the nice 8 cup size. I make brown rice, wild rice, lentil soup, pea soup, steel cut oatmeal, quinoa, barley and other whole grains. Everything seems to come out perfectly and clean-up is easy. I usually set the bowl in the sink with some warm water in it for about 10 minutes and then just sponge out any remaining residue.
Two thumbs up for this great rice/grain/other stuff cooker!

I have had this Harsch Gairtopf Fermenting Crock Pot on my wish list for years. I at long last finally made the purchase when I found the 7.5.Litre size recently through an Amazon link for $119 and free shipping!!! It is the German fermentation stoneware crock by Harsch Steinzeug and has no labelling for Miracle (the sole importer) as it is shown at Amazon. (Mine just arrived from Germany. It was on back order for some time).
This fermentation crock pot is highest quality as you might expect from German craftsmen. It truly is the Mercedes Benz of stoneware fermentation pots. It is made of stoneware and covered with a lead-free glazing. It is beautiful and easy to handle, clean and use.
The unique Harsch method of fermentation is proven. The crock includes 2 stoneware weighing stones which replace the wooden board and cloth of other methods. (If you've ever done fermentation that way, you know the problems you can have). Furthermore the lid has a deep water groove which provides an airtight sealing that prevents undesired yeast from forming. Clear instructions are included as well as some basic recipes.
I debated for a long time between the 5 litre and 7.5 litre crocks. I ended up choosing the 7.5 litre size. (There are also larger ones ranging from 10 to 50 litres). I was a little afraid that I had chosen a crock much too large for just a single person like myself but I'm very glad I settled on the 7.5L. It's perfect although I would still like the 5L too so I can being doing a smaller batch of some other food such as kimchi or pickles fermenting at the same time.
I do have 4 large heads of organic cabbage, about 12 lbs, filling the 7.5L to capacity and fermenting beautifully right now. Considering how much I have to spend each week on store-bought organic, unpasteurized sauerkraut or other cultured vegetables ~ my Harsch crock is going to pay for itself in no time! I am anticipating 8 one quart Mason jars of finished kraut
I love my beautiful Harsch crock, definitely would buy it all over again and hope to do just that soon!

We cook rice and grains frequently, as do many Asian-Americans. We have used plastic-bowl microwave vessels, aluminum & teflon pots, steam pressure cookers and several others over the past five plus decades. They all work, but each has a down side. For instance wait till your visitors or grand kids hear the hissing monster of a pressure cooker.

We feared aluminum toxicity, teflon ingestion, plastic leaching and plain uncertainty of what new epidemiologic research will unleash on us tomorrow. My wife and I have conveniently labeled our failing intellects as chronic "rice-in" toxicity. Forget age, it must be all that peeling cooking pot and rice!
The stainless steel Miracle is a reasonable answer, unless we find out in some distant future that stainless steel is also a hazard. Probably not. This cooker performs well and passes muster readily with us. We have not noted any spills or crusty rice paste sticking to the bottom. We do have the advantage of having cooked rice and grains for many years. But this is an easy skill to acquire if you learn to vary the amount of water used to suit the type of rice or grain. Don't lose heart too soon.
The pot washes easily if you soak it in water for a few hours -- and better still leave it overnight for your spouse to take care of tomorrow!
A vege tray comes with the cooker. It steams beans, peas and carrots well and to a ready-to-eat tender state.
I agree that a price of some $50.00 would have been better, but the convenience and safety are worth the added whimper while you pay the price. You could shop around and may be able to find a slightly lower price. And don't blow the savings on pricey coffee.

Once upon a time many people thought that eating "healthy" meant getting out a scale, weighing their food, counting calories and suffering in silence. With the advent of a push for the inclusion of fresh, healthy foods in our diets, more and more people are turning to locally grown foods. Seemingly simple fruits and vegetables come alive in Simple, Fresh & Healthy: A Collection of Seasonal Recipes. Take for example sweet potatoes. This common root vegetable is a favorite in the South and when Thanksgiving rolls around, it is one of our favored holiday side dishes. When browsing this book I was immediately drawn to a dish of "Maple-Roasted Sweet Potatoes." The simple addition of two tablespoons of pure maple syrup added to the natural sweetness of the vegetable and will make this roasted dish a delightful addition to any meal at any time of the year.
Divided into seasonal sections, the book teems with scrumptious, mouthwatering recipes to suit every taste. Oftentimes I find that cookbooks have a tendency to be overly regional, cater to a slice of the population, or try a tad too hard to outdo the Julia Childs of the world. This book is totally refreshing and the unique recipes are sure to please a wide variety of people. Few people would turn down a nice cold glass of lemonade made from scratch on a hot summer day nor would many turn away from a warm French toast soufflé smothered in maple syrup on a cold winter's day. There are recipes that will excite both the younger cook and those who have been cooking for many years. Perhaps you'll simply need to whip up some fresh peach salsa, open a bag of chips, and start browsing this book!
Those with special dietary needs or the calorie conscious won't be disappointed as each recipe comes with a complete nutrient analysis listed at the bottom. Few recipes list the preparation time, but this book is for the food lover who loves the preparation as much as they love to savor the results, not for those whose idea of a meal depends on prep time. Take for example, the recipe for "Fresh Strawberry Pie." If you are not willing to wait for it to chill in the refrigerator for four hours after making it, you'd best buy frozen at your local grocery store and miss out on the treat of a lifetime with this to die for pie. Most of the recipes are prefaced by a brief personal vignette or preparation tip. The ingredients are colorfully highlighted so the cook can easily gather them up. The photographs are very enticing and elicited more than one "mmmmmm!" in this household. There is one relative that tries and very often succeeds in walking off with my new cookbooks, but this one will soon be going into hiding!
